Raw Chocolate Pudding

Everyone we know enjoys something sweet now and again, but what if we told you that you can make something sweet with raw ingrediants, that will give you your fix plus added bonus of nutritional value? 

Well here it is... The Omazing Raw Chocolate pudding rcipie that will leave you feeling satisfied and guilt free.

Ingredients:
4     Avocados 
15   Whole Dates 
1/2  cup of raw honey
2      tbsp (or more if you desire) of cacao or cocoa powder
1-2  tbsp maca powder (optional but adds more goodness to your health)
1-2  tbsp of vanilla
1     tsp cinnamon powder
1/2  tsp sea salt

Directions:
  1. Pit dates. Throw away pits. Put dates a bowl and cover all of them with water. Soak dates for 15 min. 
  2. Once soaked, put dates in a blender. KEEP and set aside the water you soaked them in.
  3. Cut avocados in half. Remove pits, scoop out the "green goodness". 
  4. Place avocados, raw honey, maca, vanilla, cinnamon and sea salt to the blender.
  5. Begin to slowly pulse the blender. As the ingredients become blend, add tiny amounts of "date water" as needed to fully blend to a smooth and thick paste.
  6. Once smooth, do a taste test and see if you would like to add anything more, such as more honey for sweetness, cocoa for more chocolate. Blend again if you add more of anything.
  7. Remove from blender. Chill pudding in a large container or in serving bowls for a few hours. 
  8. Lick your spoon and scrape the blender clean of residual pudding. :)
  9. Serve with your choice of fresh fruit (our favourite is strawberries and shredded unsweetened coconut.)
  10. Enjoy thoroughly with a smile. Knowing that you are getting a sweet treat that is very very very good for you!




Tropical Green Smoothie

1 cup water
1 cup Pineapple
1/2 green apple
1/2 red(ish) apple
1/2 Orange (remove peel only, keep use white stuff)
1 medium Kale leaf & stem 
Handful Spinach1 tsp Flax seed

1 table spoon of fresh ginger
.5 - 1 cm thick Wheel of fresh lemon (include rind)
Mint (I like about 5-8 leaves plus a little stem)
handful of Ice

Optional Ingredients:
Choose what you feel you would like to include
1/4-1/2 Carrot
1/4 cucumber
1/4 avacado
1/4 banana 
1/2 cup green grapes

Put ingrediants in a blender (I prefer Vita Mix). Blend on "smoothie" setting or until smooth. Pour into a hippy mason jar and enjoy!

Coconut Chicken Soup

This is a very wonderful delicious soup the freezes very well. If you do not have every single ingredient that is fine, it will taste just fine! But if your like me, you gotta have it all ;) If your vegetarian  take out the chicken and it’s broth, and replace with a vegetable broth.




Ingredients:

Raw Whole Chicken

Chicken stock from cooking chicken

2 Can of coconut milk

1 big, or two small sweet potatoes or yams - chop into 1 inch / 1 inch cubes

3 Carrots - slice leaving the round shape

Yellow Onion - chop well so on the smaller side

1 whole pepper - Red yellow or orange or green or all four colors - Julienne

4-6 oz Mushrooms - Slice into quarters

1 inch Ginger - grade finely

2 cloves Garlic

4 Cloves or 1/2 - 1 teaspoon to taste

Salt & Pepper to taste.

2 small, or 1 large Tomatoes - cut into wedges



Garnish 

Bunch of cilantro Finely chopped

Lime - Wedges

Green onion - sliced to keep round shape.




Directions
  1. Submerge the whole chicken in a pot of water. Boil until fully cooked. Remove chicken and set aside to cool a bit. 
  2. Add potatoes, carrots and onions, garlic to the broth leave on medium heat.
  3. While these items are cooking, remove the drumsticks and thighs, set aside, and shred the rest of the chicken meat, also set aside.
  4. Add Peppers, mushrooms, ginger, cloves, coconut milk, chicken meat, salt and pepper. Cook on medium until the peppers are cooked to your liking.... ( I like mine, still a crunchy)
  5. If your hungry, go ahead and eat! But if you have some time, turn off the burner, leave the pot where it was cooking. Cover with a lid and let it sit for 10-20 min.
  6. Ladle into a nice bowl, garnish with cilantro, a squeeze the wedge of lime into the soup then a few green onion sprinkles, and Enjoy... every last sip :)
